Skinny Chocolate Coffee Ice Cream!

This ice cream takes no time at all and so yummy! No heavy cream or refined sugar here!


  • 1 frozen banana
  • 1 cup of coffee or 15-20 frozen coffee cubes (pour coffee into ice cube trays and freeze)
  • 1 tsp. vanilla
  • Shake of salt
  • 1 tablespoon sweetener (such as stevia or honey)
  • 1/4 cup cocoa powder
  • 1/2 - 1 cup of almond milk
  • Optional: chocolate almond butter or chocolate chips
  • NOTE: if not using frozen banana/coffee cubes put 1 cup of ice cubes in.


Blend all ingredients in a blender or food processor until smooth and enjoy! Put in the freezer for a few minutes if you want it to be thicker and more like ice cream!

Egg and Grits Breakfast Casserole!

This casserole is light, fluffy, and delicious! It is very easy to make and quickly heat up for breakfast!

Recipe: 
  • 6 eggs 
  • 2 cups cooked grits
  • 1/2-1 red pepper (diced)
  • Half one red onion (diced)
  • 1/2-1 cup chopped spinach 
  • 1/2 cup cottage cheese 
  • 1/4-1/2 cup shredded cheddar cheese 
  • Seasoning of choice (I used garlic salt, and salt & pepper) 
  • optional: sausage (I put sausage in half of my dish) 








Cook 1/2 cup of dry grits according to package. 





















 Chop the veggies, the measurements do not have to be exact and feel free to experiment with other vegetables too, but make sure that you have at least 2 cups of chopped vegetables. 
















Saute the veggies on low heat. 
























When the veggies look like this, turn the heat off. 















Now mix the eggs, cottage cheese, seasoning, and grits. 

















Add the veggies and stir until combined. 





Pour into a prepared medium pyrex dish and bake at 350 for 45 minutes.  I turned my oven to 400 degrees after about 40 minutes and that cooked it and made it nice and crispy.

Healthy Samoas Bars!

This recipe is super simple and very delicious!! These bars are flourless and have two layers of yumminess ;) The first layer is the crust and the second a secretly healthy caramel coconut layer! Sprinkle with chocolate chips and delight in these skinny Girl Scout cookie bars!

Healthy Samoas Bars:
  • 1 cup dates
  • 1/2 cup unsweetened shredded coconut
  • 1 cup mixed nuts
  • 1 tbs. coconut oil
  • 1/2 tsp. vanilla
  • Shake of salt
  • A few chocolate chips 
In a food proccessor, mix the dates until they look like this, and transfer to a small bowl.
Note: You can soak the dates for a few minutes before processing them to make it more like a dough.

Now add the coconut and mix until combined.




In the food processor, blend nuts and coconut oil.
Next, simply transfer crust (dates and coconut oil) to a 5 by 5 Pyrex dish and press it down.



Now press the coconut/date mixture on top of the crust.













Sprinkle with chocolate chips and coconut! Bake at 350 degrees for 20 minutes and ENJOY! :)

Gluten Intolerance Association Meeting!!

On February 14, my mom and I were invited to come to the Gluten Intolerance Association's monthly meeting to speak about gluten free baking and living. We were so excited to have this opportunity to tell others in our community what we know! We made a packet with our favorite gluten free recipes, blogs, and tips, and also brought along my favorite cookies ;)
Everyone was so so nice and asked great questions! I had such an awesome time, and I am so grateful that I was able to come and share a little bit of our knowledge! After this meeting, I have lots of ideas for new recipes that I will make and post very soon!! I'm so sorry that I haven't posted a recipe in so long, I promise lots of recipes are coming! Please leave questions, comments, and suggestions if you have any!!
