This recipe is super simple and very delicious!! These bars are flourless and have two layers of yumminess ;) The first layer is the crust and the second a secretly healthy caramel coconut layer! Sprinkle with chocolate chips and delight in these skinny Girl Scout cookie bars!
Healthy Samoas Bars:
- 1 cup dates
- 1/2 cup unsweetened shredded coconut
- 1 cup mixed nuts
- 1 tbs. coconut oil
- 1/2 tsp. vanilla
- Shake of salt
- A few chocolate chips
In a food proccessor, mix the dates until they look like this, and transfer to a small bowl.
Note: You can soak the dates for a few minutes before processing them to make it more like a dough.
Now add the coconut and mix until combined.
In the food processor, blend nuts and coconut oil.
Next, simply transfer crust (dates and coconut oil) to a 5 by 5 Pyrex dish and press it down.
Now press the coconut/date mixture on top of the crust.
Sprinkle with chocolate chips and coconut! Bake at 350 degrees for 20 minutes and ENJOY! :)
