Egg and Grits Breakfast Casserole!

This casserole is light, fluffy, and delicious! It is very easy to make and quickly heat up for breakfast!

Recipe: 
  • 6 eggs 
  • 2 cups cooked grits
  • 1/2-1 red pepper (diced)
  • Half one red onion (diced)
  • 1/2-1 cup chopped spinach 
  • 1/2 cup cottage cheese 
  • 1/4-1/2 cup shredded cheddar cheese 
  • Seasoning of choice (I used garlic salt, and salt & pepper) 
  • optional: sausage (I put sausage in half of my dish) 








Cook 1/2 cup of dry grits according to package. 





















 Chop the veggies, the measurements do not have to be exact and feel free to experiment with other vegetables too, but make sure that you have at least 2 cups of chopped vegetables. 
















Saute the veggies on low heat. 
























When the veggies look like this, turn the heat off. 















Now mix the eggs, cottage cheese, seasoning, and grits. 

















Add the veggies and stir until combined. 





Pour into a prepared medium pyrex dish and bake at 350 for 45 minutes.  I turned my oven to 400 degrees after about 40 minutes and that cooked it and made it nice and crispy.
